I had a user who turned off her offline folder files since she was not using it. Unfortunatly she was saving EVERYTHING in the offline folder file, and the synconiztion with the server was not working, so all her data is gone. My question is there a way to get back into the offline folder file file and recover her documents.

Welcome tearin. Enjoy your stay and have fun...
Not for sure if this is what you need or not. Check it out....
Restoring from an OST after Deleting the MailboxYou can recover mail stored in an OST, provided that you have not tried to modify the profile that was used to create the OST file. If the profile used to create the OST file has been modified to point to a new mailbox, the information contained in the OST file may be lost.
This is because security on an OST works so that Windows NT authentication cannot be used when you work offline. Therefore, you must "prove" that you're allowed to log onto the server-based master before the OST file gives you local access. To do this, Exchange Server creates an encrypted "cookie" from your mailbox's unique entry ID while you are successfully logged into the Exchange Server computer. This cookie is securely stored in your Exchange Server profile. Essentially, your profile stores this key for the OST. Every time you try to access the OST file it checks your profile for the existence of this key.

She had the my documents folder pointing to her private space on a server. This was set to synconize back to her local machine so she could work with the my documents folder even while not on the network. The problem is she has not been on the netwoork for sometime so has been all along saving things to my documents inside the off line folders. This information has never synced back up to the server so when she unchecks the box "enable offline use" all her data is gone.
What I want to know if there is a way to get this back.

Well I got this from microsoft
More About the Offline Files Database
The database containing information about Offline Files resides in the hidden system folder, or directory, called %systemroot%\CSC. The name CSC refers to client side caching. The CSC directory contains all offline files requested by any user on the computer.
Files in the CSC directory are not encrypted, nor is encryption preserved, but file permissions and system permissions on the file are preserved. Therefore, a Microsoft® Word document created by Peter Tysver, given a password, and saved to a share on which only he has Full user rights, cannot be opened from the CSC directory by Renee Smith, because she has neither the share rights to open the file nor the password required to open the file in Microsoft Word.
To open or view the files in the CSC directory, you must log on as a member of the Administrators group. Because file encryption is not preserved, it is possible to log on as an administrator and to open files and view their content from the CSC directory by using a program such as Notepad. Users who share computers need to be aware that sensitive information can be viewed by anyone who is a member of the Administrators group.
Note On a FAT file system or a FAT file system converted to NTFS, users might be able to read information that is cached in the %systemroot%\CSC directory. This includes offline files requested by another user on the same computer.
It is very important not to move or delete files directly from the CSC directory. For more information about moving the cache folder and deleting files from the cache, see "Managing Offline Files" later in this chapter.
So now I need to reconnect to the cache without over writting.
