How do I change the setting so that when I highlight words with my mouse they either disappear when I hit backspace or when i replace it with new text. This has been a huge problem when I want to delete long texts and I have to hold down backspace to get rid of it.

If I understood you correctly, that is the default behaviour of Word - select block of text with mouse, hit backspace or del to delete it. See Insert/Overtype mode in settings ("typing replaces selection"), and, as a last resort, delete your Normal.dot located in Documents and Settings\YOUR_USERNAME\Application Data\Microsoft\Templates\ (with this you will lose all your customizations).
The last last resort would be to reinstall office.
