MAVERICKS CHOICE
You can easily make a silent installer (slimmed) & run with a UA install in setupcomplete.cmd or use wpi....Guess it depends how small you require your disk to be? Most Vista UA installs are limited to a dvd anyhow..
Tripredacus
I recommend installing OfficeReady. It is the full Office 2007 install, but when you open it asks for your key and it unlocks the Office features that go along with that key. My current Business SP1 image uses OfficeReady and I plan to do our other images that way as well.

Tripredacus
Perhaps take your vLited Vista, install on machine. install Office. sysprep/generalize, capture with imagex. This is the standard recommendations I get from MS.
Minus30
I used this guide to make a silent install and then let it install in Audit Mode. Works like a charm ^^
