I'm new to making customizations for Windows 7 so I hope someone can point me to the right direction with what I got to ask:

Is there a way to turn off some features off before installing Windows 7? What I mean by this is not to remove the feature from a Windows 7 installation but just prevent it from installing as default with every installation. Features such as Games and IE8 are by default, installed on a fresh OS install and I would like to have those features on as an option, instead of having myself to switch them off after installation. Can this be done?

Yes, this can be done. There are tools here to do it, or you can use the WAIK directly via DISM to disable features in an offline WIM. It depends on what you're comfortable with.
