check the line where it says "Unattended user (workstation) installation"
didn't try it yet, but sounds promising

works flawlessly for me, with Open Office v1.1 and i must say what a great suite of programs, i'm never using MS Office again, there's just no reason to as you can read MS format files and save in MS format aswell.

Setup.txt

[Environment]
InstallationMode=INSTALL_NORMAL
DestinationPath=C:\Program Files\OpenOfficev1.1

[Java]
JavaSupport=preinstalled_or_none

[Windows_Desktop_Integration]
Register4MSWord=True
Register4MSExcel=True
Register4MSPowerPoint=True
RegisterAsDefaultHTMLEditor=False

Run command:

C:\test\setup.exe -r:setup.txt -debug

place all office files in C:\test including setup.txt
