If you need to reduce the size of your Office 2003 install folder, you can use Office Shrinker - its right here in this forum. I reduced the size of my install, to include only word,excel and PPT viewer - and office 2003 installer is now only 40 MB.
You *CAN* have that spell-check add-on installed along with rest of the things - just find out the silent install switch for it. Mostly you need to use just the "/QB" switch, if it is an MSI-installer.
Now, whether to do this, you want to make it a 2-CD unattended install, is up to you - info available here, please search.
As for a way to have a choice, of your uA install asking you a question of whether you want to install the dutch language-pack or not, that's far easier to implement. And you have a choice of the HOW for that as well - batch-files, VBscripts, WIHU, XPdeploy, and so on.
