I was just curious to see if anyone here has used Windows XP Embedded.
I am very unfamiliar with this sort of O/S...it appears that you are given a set of "shared code" (the actual source code) which has to be customized and compiled into an Embedded image to be installed to the target device.
Anyone have any comments/experiences?

XP Embedded doesn't provide source code. It provides Windows XP, in layers of components, and those components can be combined together to create an image specifically suited to an embedded device as needed.

Well - I tried XP Embedded some time ago. I spent many hours with it, but eventually I threw it out because it was taking up too much space.
Anyway, XPE allows you to create a completely customized XP HD (or CD) image. It is probably the "ultimate customization tool". But you can't "install" the image - you can only boot it (if you are lucky) and run it. Not that I ever got that far...
