If I create a rule in Outlook 2003 so that it filters out repeated spam form the same sender so that it is permanently deleted, is there a way to log the number of times a spammer has attempted to send me spam email if it is permanently deleted by a rule that I create?

You could just setup a spam folder for the mail instead of deleting them. That way you can look in there and see what is going on.
