I could slipstream everything, but when testing I found IE7-WindowsXP-x86-enu.exe was not slipstreamed. Any idea on how to include it in the package?

Which version of HFSLIP are you using?
The changelog for HFSLIP version 1.1.0 mentions the introduction of IE7 slipstreaming on XPSP2.

After using HFSLIP myself I would always recommend it, but
Boooggy made an IE7 addon you could integrate with nLite,
I know that works for sure.

Why did he bother with that? you can use nlite to point directly to the microsoft installation file of ie and it'll slipstream it.
