It's the easiest program I've ever made an SMS deployment package for.

Copy the install disk to a network share, create a shortcut to setup.exe, edit the setup properties to add
/admin
to the end of the shortcut command path, and run that. It brings up a very nice wizard for customizing your office install. When you finish, just save the resulting file in the "updates" folder and it'll automatically get applied when setup.exe is run (whether it be through SMS or directly from the network share).

The same works for Visio 2007 and Project 2007.

Only works for the Enterprise version.
