I have a VM with just SP5 slipstreamed, so after Patch Tuesday I point it at Windows update and see what shows up. I then compare the list with the preceding month's results and double check against that month's security advisory.
As to which ones to slipsteam and which go at runonce, that's just trial and error.

The XP x64 guide would probably be a better one to base XP x86 off, the main change of note is that TimeOut doesn't exist in 32-bit XP, you'll have to use the ping commands used in this W2K guide.

I have my starting point ready to go now - a fresh XP x86 SP3 source on my WDS server with integrated textmode drivers for the VMware scsi controller (pretty sweet). I can already see after the first pass of Windows update on my guinea pig that your XP x64 list will indeed come in handy!
